Pinot noir L’Aubrière Vignoble Malidain 2018
Description
This pinot noir is pale ruby, with hints of fresh red fruit (strawberry, rasberry, rupe red fruit) with some basil and tomato leaf on the nose as well as on the palate. It has a light body with high acid, medium alcohol and extremely well balanced tannins.
Vinification
Slow maceration in stainless steel tank, then punching of the cap, and pumping-over.
Ageing in 2 year-old barrel on the third of the volume, during 8 months. The rest is aged in wine tank for 8 months

Burgundy snails, pot roast, roasted chicken, tripe with tomato sauce, black pudding with crushed potatoes, pork fillets with Maroilles, chicken tajine, grilled mullet fillets, Loire pike perch, cheeses like Saint Nectaire, Epoisse or Mimolette
